stirred lazagna and chicken enchiladas
On Sunday we made stirred lasagna, which is James' favorite meal. It's really easy and we never use a recipe. this time we used
1 1/2 lb ground beef (browned and drained)
1 1/2 package of any type of noodles
1 tub sour cream
1 tub cottage cheese
1 26 oz can spaghetti
some grated cheese
preheat oven to 350. mix it all together put into 9x13 pan, sprinkle cheese on top. cook for 30-45 min. or until cheese melts, and it starts to bubble.
We ate ours with green salad and homemade ranch :)
tonight we had chicken enchiladas. I just kinda created my own way of making them. here's what i did:
1/2 cooked and shredded chicken breast (James and i don't like a lot of chicken in our enchiladas)
1 tub sour cream
4 oz cream cheese
1 10 oz can green enchilada sauce
1 can cream of chicken soup
salt and pepper to taste
shredded cheddar cheese
flour tortillas
combine all ingredients except shredded cheese. smear a little of the mix on the bottom of the pan, place 2 tortillas on the mix, the smear a good amount of mix on the tortillas, and repeat alternating how the tortillas are placed, until pan is 3/4 full sprinkle on cheese. cook at 350 for 20-30 min or until cheese is melted and enchiladas are bubbling.
we ate our enchiladas with beans and corn.

not my mom's chicken casserol

I took this picture with my phone because my camera died.
I will first give you the original recipe and then I will tell you how i changed it.
4 chicken breasts (uncooked)
4 slices of swiss cheese
1 can cream of chicken soup
1 bag or box chicken seasoned stuffing
preheat oven to 350, place chicken in baking dish, place one piece of cheese on each chicken, pour cream of chicken in baking dish, sprinkle stuffing on top of it all. Place in oven and cook for 1 hour.
I was at work from 11am to 4pm and i did not want to wait an hour to eat, So this is what i did differently. I substituted the chicken breasts for one of my mother-in-law's wonderful precooked bottled chicken. I then used 2 cans of cream of chicken soup and mixed it with the chicken to coat the chicken. I put that in a baking dish and then since James and i both love cheese we put 6 pieces of swiss cheese on the concoction, and then topped it off with the seasoned stuffing. since the chicken was already cooked i only cooked the casserole for 30 min. to melt the cheese and heat it through. We also ate it with rice and a nice green salad with homemade ranch. It was a very filling meal

breakfast burrito
We bought a package of bacon a long time ago and it was about time to finish it. This meal would be the third one we used this package of bacon for. We also had two backed potatoes left from when we made them a week or two ago. So we threw them together and made a breakfast burrito! In a skillet I cut up 5 strips of bacon and grated 2 backed potatoes, the grease from the bacon was a bit much, but it worked. After the bacon and hash-browns were cooked I added two scrambled eggs and quickly mixed them in. The eggs didn't take very long before they were done. We then microwaved some tortilla shells and stuffed them with the breakfast concoction. It made 2 burritos for James, one for me, and an extra one for leftovers.
What I would do different next time: Less bacon, cook bacon separately because it let off too much grease (I am always trying to limit the number of dishes I have to do, and sometimes it bites me in the bum), and more eggs.

my first food blog
I love looking at food and cooking blogs! I love all the wonderful ideas and the great pictures. The only problem is that most of the recipes are often too fancy for our wallet! I thought it would be fun to blog about everyday recipes. We have a food budget of $200 a month, and we are really good at staying under our budget. So what kinds of meals can be made for only $200 a month? Some really good ones actually! Granted we have help from our parents occasionally (for which we are very grateful for), but for the most part, it comes out of our own wallet. I chose the name 'cheep eating', instead of 'cheap eating' because I like how it sounds like 'keep eating'. I guess that I wanted to send the message that even though we may not have a lot of money we keep eating. I know that the reason we eat three enjoyable meals each day is because our Heavenly Father is watching over us! He knows what we need, and he blesses us abundantly. It is such a comfort to know that we will always be taken care of because we have a Father in Heaven who loves and cares for us daily!
