On Sunday we made stirred lasagna, which is James' favorite meal. It's really easy and we never use a recipe. this time we used
1 1/2 lb ground beef (browned and drained)
1 1/2 package of any type of noodles
1 tub sour cream
1 tub cottage cheese
1 26 oz can spaghetti
some grated cheese
preheat oven to 350. mix it all together put into 9x13 pan, sprinkle cheese on top. cook for 30-45 min. or until cheese melts, and it starts to bubble.
We ate ours with green salad and homemade ranch :)
tonight we had chicken enchiladas. I just kinda created my own way of making them. here's what i did:
1/2 cooked and shredded chicken breast (James and i don't like a lot of chicken in our enchiladas)
1 tub sour cream
4 oz cream cheese
1 10 oz can green enchilada sauce
1 can cream of chicken soup
salt and pepper to taste
shredded cheddar cheese
flour tortillas
combine all ingredients except shredded cheese. smear a little of the mix on the bottom of the pan, place 2 tortillas on the mix, the smear a good amount of mix on the tortillas, and repeat alternating how the tortillas are placed, until pan is 3/4 full sprinkle on cheese. cook at 350 for 20-30 min or until cheese is melted and enchiladas are bubbling.
we ate our enchiladas with beans and corn.
